My fellow blogger/friend/former client Lindsey at Fall Into The Gray has been raving about this chili recipe for quite sometime and now I know why! I have all but stopped making chili because no matter which recipe I try, it all bores me. Same, same, same – boring, boring, boring. I eat one bowl and can’t bring myself to eat another, which results in lots of wasted chili.
It’s been a LONG time since I made chili but now that I’ve tried this recipe, it will be making regular appearances for sure! I added fresh pineapple instead of canned, making sure to finely chop it so it would be evenly dispersed, which Lindsey said was key – you want sweet and spicy in every bite. Can you imagine a more perfect combo than bacon + grass-fed beef + jalapeño peppers + pineapple?! This is a Paleo chili recipe, which means no beans, which is totally fine by me because I don’t care for them anyway! Add them if you like; I think black beans would go best here.
I threw everything in the slow cooker this morning and cooked it on low all day. Topped with a few chunks of avocado, more fresh pineapple, and some Fage Greek yogurt – HELLO Sunday night dinner! This stuff is the bomb!
I may or may not have dipped some Late July Mild Salsa Mojo tortilla chips in it. I know – not even REMOTELY Paleo. But if 80-90% of what I eat is clean, whole foods, and if a few tortilla chips happen to make their way into a meal or two every now and then, I don’t sweat it for one second.:) (Just a little extra fuel for 8:30 a.m. Body Attack!)
Make your own pot of Paleo chili awesomeness with this recipe from Civilized Caveman Cooking Creations. I halved the recipe and it still made a LOT, but if you need to feed an army of cave people, proceed as written. I will need to amp up the heat for my next batch of this chili because The Guy (who really needs a nickname here on the blog) said it didn’t have enough heat. Next time: more jalapeños, more crushed red pepper flakes. Noted.
