Breakfast Bread Reinvented…..Squash Style!

Let me make one thing very clear – I LOVE VEGETABLES.

I love the way they taste.  I love to cook them.  But most of all, I love to BAKE them.

Baking with vegetables is easy and an amazing way to add nutrients to your day, especially if you have picky eaters or sugar addicts.  I have a sweet tooth that could overpower an elephant.  Yes, it’s that bad.  In order to keep from eating all of the sugary treats I see, I make baked treats like this to satisfy my cravings.

Oatmeal Squash Loaf

3/4 c oatmeal flour

3/4 c almond flour

2 tbsp coconut flour

1 tsp baking powder

1/4 c coconut sugar

1/2 c stevia

1/2 c olive oil

1 tsp vanilla extract

1 egg

2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp fine sea salt

1 1/2 c grated yellow squash

1/4 c whole oats


Preheat oven to 350 degrees.  Spray a loaf pan with nonstick cooking spray and set aside.

In a small bowl, whisk together flours and baking powder.  Set aside.

In a large bowl, combine coconut sugar, stevia, oil, vanilla extract, egg, cinnamon, nutmeg, and salt.  Add in squash and mix well.

Mix in dry ingredients and mix until just combined.

Pour batter into prepared pan and sprinkle oats on top.

Bake for 50 minutes or until a toothpick inserted into the center comes out clean.

Allow bread to cool and remove from pan.


Serve with breakfast, brunch, as a snack, or dessert.  This bread is good with just about everything!
