Happy Easter! + What I ate for Easter dinner

After the Epic Cheat Meal-from-Hell last night (more on that later), I was happy to start off the day with a nice, light brunch from Wegman’s:  two poached eggs over canadian bacon and spinach with a side of fresh fruit.  After you sicken yourself with too much sugar (as I did last night), the first order of business is getting your blood sugar back under control and then pounding the H2O.

As for Easter dinner, I don’t know why, but I wasn’t interested in the usual fare this year (lamb, ham, deviled eggs, etc.)

So I realize there is NOTHING about this that says “Easter dinner,” except that I ate it on Easter day.  It’s hardly a holiday menu, but for some reason I wound up in the kitchen all afternoon playing and messing and this is what came out of it.  A yummy, healthy meal made from what I had on hand in my kitchen.

I don’t regret a thing. :)
